Beef Taco Skillet

Matt found this recipe in a magazine yesterday. It was part of an ad for Campbell's soups.

1 lb ground beef
1 can (10 3/4 oz) Campbell's Tomato Soup
1/2 cup salsa
1/2 cup water
6 flour tortillas (6 "), cut into 1" pieces
1/2 cup shredded Cheddar cheese

Cook beef in 10 " skillet until well browned, stirring to break up meat. Pour off fat.

Stir in soup, salsa, water, tortillas. Heat to a boil. Reduce heat to low and cook for 5 min. Stir. Top with cheese. Makes 4 servings.

-We haven't had it yet but hopefully will try it tomorrow. It just looked really good. :-)

Pumpkin Dip

4 c confectioners' sugar
2 (8 oz) pkgs. cream cheese, softened
1 (30 oz) can pumpkin pie filling mix
2 tsp ground cinnamon
1 tsp ground ginger
1 (16 oz) carton Cool Whip

In a large bowl, combine sugar, cream cheese and Cool Whip until well blended. Beat in remaining ingredients. If consistency is too thin, add more powdered sugar to thicken. Store in an airtight container in the refrigerator. Serve with ginger snaps or as a dip with fresh fruit. For a nicedecorative Fall centerpiece, hollow out a small pumpkin and serve dip in it.

Apple Bread

I got this recipe off of http://www.allrecipes.com. I made it at Thanksgiving last year and it was pretty good.

Apple Bread
3 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegetable oil (I replace most of this with applesauce)
2 cups sugar (I do half brown sugar and half white sugar)
2 eggs, beaten
1/2 teaspoon vanilla
2 cups apples-peeled, cored, and coarsely chopped
1 cup broken walnuts
In bowl, combine flour, cinnamon, baking soda, baking powder and salt; set aside. In large mixing bowl, place oil, sugar, eggs, vanilla and apples. Stir into flour mixture. Add walnuts and mix. Divided mixture between two greased 8-in. x 4-in. bread pans. Bake at 350 degrees F for 40-45 minutes or until bread test done. Cool for 10 minutes on wire rack before removing from pan.

Pizza Bread

1 Tbs. dry yeast
1-1/2 cups warm water
2 Tbs. sugar
1 tsp. salt
1/4 cup melted buter, margarine, shortening
1 egg, slightly beaten
3-1/2 to 4-1/2 cups flour
toppings/filling:
these can vary, i use a cup or two of cheese and however much meat that you want. It's all good.

Dissolve yeast in warm water. Add the other ingredients in order given, mixing well after each addition. Add enough flour to make a soft dough that can be shaped with tour hands. At this point i kinda treat it like cinnamin rolls. Roll it out flat throw some cheese on and add pepperoni. you can add whatever cheeses, meats, whatever that you want, heck, you don't even have to let rise. Rolll it up put it on  a greased pan.
 Bake for 20 minutes at 400 degrees. brush with butter if desired.
*note this is pretty much the same as the no knead yeast rolls recipe, just how you treat the dough is different, cooking is something you can find great joy in, you aren't compleatly governed by rules and you get to eat it when your done.

No knead yeast rolls

1 Tbs. dry yeast
1-1/2 cups warm water
2 Tbs. sugar
1 tsp. salt
1/4 cup melted buter, margarine, shortening
1 egg, slightly beaten
3-1/2 to 4-1/2 cups flour

Dissolve yeast in warm water. Add the other ingredients in order given, mixing well after each addition. Add enough flour to make a soft dough that can be shaped with tour hands. Shape into rolls and let rise until double( about 20 minutes).
 Bake for 20 minutes at 400 degrees. Remove from pan and brush with butter.

Pizza From scratch

1 pkg. active dry yeast(1/4 ounce)
1 cup warm water(110-115 degrees)
2 Tbs. oil
1 tsp. salt
1 tsp. sugar
2-3/4 to 3-1/4 cus flour

 Dissolve yeast in water, add oil, salt, sugar, and 2 cups of flour. Beat on medium speed for 3 min. ( I prefer to mix just about every thing by hand, It may take a little bit longer but it still turns out okay) Add enough remaining flour to form a soft doug. Turn onto a floured surface; kneed until smooth and elastic, about 6-8 minutes. Place in a agreased bowl, turning greased side up. Cover and let rest in warm place for at least 10 minutes.
 Divide dough in half. On a floured surface, roll each portion into a 13 in. circle. transfer to two greased 12 in. pizza pans; build up edges slightly. Bake at 375 degrees for 15 minutes or until lightly browned. Spread sause over hot crusts; sprinkle with toppings. Bake for 20 minutes or until chees is melted.

Porcupine Meatballs

1 Lb Hamburger
Dash of pepper
1/2 cup rice
1 cup milk
1 tsp. salt
1 egg
1/2 cup chopped celery or onion (opt.)

Mix all together, shape into balls. Pour Mixture of 2 1/2 cups tomato juice and 1/2 cup water over meatballs. Bake at 350 for 1 1/2 hours. Fits fine in a 9 x 13 dish.

Cheeseburger Soup

I got this recipe from my mother-in-law.

1/2 lb ground beef
3/4 c chopped onion
3/4 c shredded carrots
3/4 c diced celery
1 tsp dried basil
1 tsp dried parsley
4 T butter or margarine
3 c chicken broth
4 c diced, peeled potatoes
1/4 c flour
8 oz (2 c) Velveeta cheese, cubed
1 1/2 c milk
3/4 tsp salt
1/4 to 1/2 tsp pepper
1/4 c sour cream or plain yogurt

In a 3-quart saucepan, brown beef; drain and set aside. In the same pan, sauté onion, carrots, celery, basil, and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add broth, potatoes, and beef; bring to boil. Reduce heat; cover and simmer 10 to 12 minutes, or until potatoes are tender.

Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3 to 5 minutes, or until bubbly. Add to soup; bring to boil. Cook; stir 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper. Cook; stir until cheese melts. Remove from heat; blend in sour cream or yogurt.

Yield: 8 servings.

Sponge Candy

1 Cup sugar
1 Cup dark Karo syrup
4 tsp baking soda
1(12oz.) pkg. choc chips
2 sqs. baking choc.
2-in. square paraffin

Combine the sugar and syrup. Bring to a Boil over medium heat, stirring until sugar dissolves. Cook to hard crack on candy theromoter(295-310F). Remove from heat and quickly stir in soda. Pour into lightly buttered 9 X 13 in. pan. It will foam up, but DO NOT STIR after putting it in the pan. cool and Break into pieces, inch squared or so. melt the chocolate and paraffin, dip the pieces into this mixture. place on wax paper.

Amish Baked Oatmeal

When I was innkkeeping at the B&B I made this often. Everyone who tried it loved it.

1/2 cup shortening
1 cup sugar
1 T baking soda (or powder-either turns out well in this dish, I tend to use soda)
2 eggs
1 t salt

Cream together shortening and sugar. Then add eggs, soda, and salt.

Alternately add:

1 cup milk
2 1/2 cups oats (you can add more to your taste)

Optional: you can add nuts or fruit.

Pour in baking dish and spread cinnamon and brown sugar over the top to your taste.

Bake at 375 degrees for 25-30 minutes.

Serves 2-4.

Oatmeal Chocolate-Chip Cookies

Oatmeal Chocolate Chip Cookies



1 cup: margarine / shortening
1 ¼ cup brown sugar
½ cup sugar
2 eggs
2 Tbs. Milk
2 tsp. Vanilla
1 ¾ cup flour
1 tsp. Soda
½ tsp. Salt (optional)
2 ½ cup oatmeal
2 cup chips (bag)
1 cup nutZ (optional)

Heat oven to 375°
Beat margarine and sugars until creamy
Add eggs, milk and vanilla; Beat Well
Add flour, soda and salt; mix well
Stir in oats, chocolate chips and nuts: Mix it up good
Drop by rounded spoonfuls onto cookie sheets, Bake 8 to 10 min. Cool 1 min. before removing to wire rack
Makes about 5 dozen

No! Bake-Cookies

No-Bake cookies


2 cup sugar
¼ cup cocoa
½ cup butter or margarine
½ cup milk
½ cup peanut butter
½ teaspoon vanilla
3 cup oatmeal

Combine sugar, cocoa, milk, butter in saucepan. Bring to a boil for 1 minute, stirring constantly. Remove from heat. Stir in peanut butter till melted, add vanilla and oatmeal. Drop by spoonfuls on wax paper. Cool. Enjoy

Monster Cookies

MONSTER COOKIES
1 stick oleo or 1/2 cup shortening
1 cup brown sugar
1 cup white sugar
3 eggs
1 tsp. vanilla
2 tsp. soda
1 1/2 cup peanut butter
4 1/2 cup oatmeal
1/2 cup chocolate chips
1/2 cup M&M's, (I like to use at least a cup)

Mix ingredients together, Drop by large spoonful, or
small ice cream scoop. Bake 350 degree oven for 12 to
14 minutes. 4 to 6 dozen
